Mastering Strawberry Season: Essential Preservation Techniques & A Glimpse into Wish Farms
Today’s post is proudly sponsored by Wish Farms, celebrating the vibrant peak of Florida strawberry season. All insights and opinions shared are authentically our own.
For those of us fortunate enough to live in Florida, this time of year brings an incredible bounty: an influx of succulent, Florida-grown strawberries filling grocery store aisles. As a devoted strawberry-loving family, stocking up when these ruby-red gems are on sale is an irresistible annual tradition. Who could resist when strawberries are priced as low as $0.98 a package, practically inviting you to fill your cart? While my daughters possess an uncanny ability to devour an entire carton of fresh strawberries in what feels like mere minutes, there are times when even our enthusiastic consumption can’t keep pace with the abundance. Whether we’ve simply stocked up a little too zealously or an impromptu weekend getaway calls us away, ensuring these precious berries don’t go to waste becomes a delightful challenge.
My initial, tried-and-true method for preserving these flavorful fruits is always to toss them into the freezer, ready to transform into vibrant smoothies or delicious desserts. However, the world of strawberry preservation offers so much more beyond just freezing. There are several fantastic, creative ways to capture and extend the exquisite taste of strawberries for enjoyment long after the season ends. This includes transforming them into homemade jam or dehydrating them into wonderfully crispy snacks. Below, we’re excited to share our favorite, easy-to-follow methods for making the most of your strawberry haul, ensuring not a single berry goes unappreciated.
A Sweet Escape: Exploring Wish Farms and Florida Strawberry Culture
To truly immerse ourselves in the heart of Florida’s strawberry season, we recently embarked on an unforgettable journey. This past weekend, we gathered a few esteemed local Florida influencers—Nichole from Casa de Crews, Dawn of This Honest Food, and Trina from Mommyhood Life—and headed to Plant City, Florida, the undisputed strawberry capital. Our destination: the welcoming fields and facilities of our cherished partners at Wish Farms.
Our enriching day commenced amidst the breathtaking beauty of the strawberry fields at Fancy Farms, a valued growing partner of Wish Farms. Here, bathed in the warm Florida sunshine, we received an invaluable education on the intricate strawberry growing process. From the initial planting of tiny seeds to the emergence of plump, ripe fruit, we gained a profound appreciation for every stage. We learned firsthand how these delicate strawberries are meticulously harvested by hand and, to our absolute delight, even had the chance to pick a few ourselves. There’s nothing quite like biting into a strawberry picked moments ago, still warm from the sun, right from the vine.
Following our inspiring time in the fields, our journey continued to the Wish Farms processing facility. Here, we witnessed the fascinating logistics of how freshly harvested berries are prepared for distribution and consumption. While strawberries are typically hand-picked and carefully packed into clamshells directly in the field to minimize handling and preserve freshness, other berries like blueberries undergo a sorting process before packaging. (For an insightful look into that process, be sure to check out our previous post from our last visit to Wish Farms.) What truly stood out at this facility was their commitment to sustainability: strawberries that aren’t deemed perfect for fresh market sale are ingeniously pureed for use in smoothies and other products. This innovative approach plays a crucial role in reducing food waste, highlighting Wish Farms’ dedication to maximizing every delicious berry.
By this point in our day, surrounded by the sweet aroma of berries and having learned so much, we were unequivocally ready to indulge in all things strawberry! Our final stop was the legendary Florida Strawberry Festival, a quintessential Plant City experience. Here, we happily claimed our fair share of delicious strawberry dishes, from towering strawberry shortcakes to refreshing strawberry milkshakes. Beyond the festival treats, we were thrilled to bring home generous quantities of delectable Wish Farms strawberries, eager to enjoy them fresh and put our preservation techniques to good use.
Unlock Peak Flavor: Three Brilliant Ways to Preserve Strawberries
Strawberry season is a time to celebrate abundance, and with these simple yet effective preservation methods, you can capture that fresh-from-the-field flavor to enjoy year-round. Don’t let a single sweet berry go to waste!
1. Freezing Strawberries: Your Go-To for Smoothies and Beyond
Freezing strawberries is arguably the simplest and most versatile way to preserve their freshness. Having a stash of frozen strawberries in your freezer is a game-changer, especially during the off-season when fresh berries are either unavailable or significantly more expensive. They’re perfect for adding a burst of natural sweetness and nutrients to your morning smoothies, stirring into warm oatmeal, or even using in baked goods. The key to successful freezing is preventing them from clumping together, making them easy to grab just the amount you need.
How to Freeze Strawberries for Optimal Freshness:
- Preparation is Key: Begin by gently washing your fresh strawberries under cool running water. After washing, carefully remove the green stems (hull them) using a small paring knife or a strawberry huller. You can freeze them whole, halved, or sliced – depending on your intended use.
- Ensure They’re Dry: This step is crucial for preventing ice crystals and freezer burn. Thoroughly pat the cleaned strawberries dry with a paper towel or allow them to air dry completely. Any excess moisture will turn into ice, impacting texture.
- The Flash Freeze Method: Arrange the dry strawberries in a single layer on a baking sheet lined with parchment paper. Ensure they aren’t touching each other. Place the baking sheet in the freezer and allow the strawberries to freeze solid overnight, typically 4-6 hours. This “flash freeze” step prevents them from sticking together.
- Long-Term Storage: Once completely frozen solid, transfer the individual strawberries into a freezer-safe, airtight ziplock bag or a rigid container. Label the bag with the date. They can be stored for up to 6-8 months while maintaining excellent quality.

2. Homemade Strawberry Jam: A Sweet Spread for Any Occasion
Strawberry jam holds a special place in my heart – it truly is “my jam!” There’s something incredibly satisfying about spreading a dollop of homemade strawberry jam onto a piece of toast, letting it melt over a warm waffle, or stirring its fruity goodness into a bowl of creamy oatmeal. Beyond its delightful taste, homemade jam offers significant advantages over many store-bought varieties, which often contain excessive amounts of added sugars and artificial ingredients. Making your own allows you to control the sweetness and utilize fresh, natural components, resulting in a healthier and undeniably more flavorful spread.
Our particularly delightful and easy homemade strawberry jam recipe stands out for its simplicity and healthful twist. It requires just four basic ingredients: ripe strawberries, a touch of maple syrup for natural sweetness, chia seeds to help with thickening (no pectin needed!), and a hint of vanilla extract to enhance the flavors. This minimal ingredient list ensures the pure taste of strawberries shines through. A freshly prepared batch can be stored in the refrigerator for up to two weeks, perfect for immediate enjoyment, or safely kept in the freezer for up to three months, extending your strawberry season well into the colder months. Imagine enjoying the taste of summer sunshine in the middle of winter!
3. Dehydrating Strawberries: A Crispy, Portable Snack
For a unique and wonderfully satisfying way to preserve strawberries, why not turn them into a fun, crispy, and naturally sweet snack through dehydration? You don’t need a specialized dehydrator to achieve this; your standard kitchen oven can do the job beautifully! Dehydrated strawberries are fantastic as a standalone snack, sprinkled over yogurt or cereal, or added to trail mix. They retain much of their intense strawberry flavor, but in a delightfully chewy, slightly crunchy form.
Simple Steps to Dehydrate Strawberries in Your Oven:
- Preheat and Prepare: Start by preheating your oven to a low temperature, ideally around 200°F (95°C). While the oven preheats, wash and hull your fresh strawberries.
- Thin Slices are Best: The secret to evenly dehydrated fruit is consistent slicing. Thinly slice the strawberries, aiming for a uniform thickness (about 1/4 inch is ideal). Arrange these slices in a single layer on a baking sheet lined with parchment paper. Ensure there’s a little space between each slice for optimal air circulation.
- Low and Slow Bake: Place the baking sheet in the preheated oven and bake for approximately 2-3 hours. Halfway through the drying process, gently turn the strawberry slices over to ensure even dehydration on both sides. Keep a close eye on them during the last hour, as smaller or thinner pieces will dry out faster than larger ones. The goal is for them to be crispy but still slightly pliable, not brittle.
As a creative alternative, you can also transform your fresh strawberries into a homemade fruit leather right in your oven. This chewy, sweet treat is a fantastic way to utilize a larger batch of berries. Here’s our favorite recipe for fruity fun roll-ups, featuring strawberries, pineapple, and peaches, though almost any combination of fruits would work wonderfully!
