I hadn’t tried every possible overnight oats flavor—until peaches entered the picture. A local peach vendor inspired me, and once I tasted ripe summer peaches, peach overnight oats had to happen.
Overnight oats are the best no-fuss breakfast: prep in minutes, refrigerate, and enjoy when you wake up. They’re perfect for busy mornings or when you need something portable.

Overnight Oats: My Go-To Breakfast
Overnight oats are incredibly convenient. They take about five minutes to prepare, store well in the fridge, and travel easily for breakfasts on the go.
Adding fresh peaches brings a bright, natural sweetness and a delightful summer flavor. I also add yogurt for extra creaminess and a touch of cinnamon to echo that peach-pie feeling.
These can be eaten cold straight from the fridge or warmed briefly—use regular or gluten-free rolled oats depending on your preference.

I like adding yogurt for creaminess; vanilla or peach yogurt works well. Cinnamon is the small addition that brings the “pie” element to life. Chia seeds are optional but add texture, fiber, and protein if you have them on hand.
Peaches can ripen quickly in summer. Keep sliced frozen peaches in the freezer for convenience, or use canned peaches in a pinch. To make the recipe vegan, substitute a plant-based milk and dairy-free yogurt.

Peach Pie Overnight Oats

Ingredients
- 1/2 c rolled oats (regular or gluten free)
- 2-3 T vanilla or peach yogurt
- 1/3 c unsweetened almond milk (or milk of choice)
- 1/3 c diced peaches (fresh or frozen)
- 1 tsp chia seeds (optional)
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1-2 tsp maple syrup or honey
- Dash of sea salt
Instructions
- Combine all ingredients in a jar or bowl that can be sealed.
- Stir well to combine so oats are evenly coated.
- Seal and refrigerate overnight or for at least 4 hours.
- In the morning, if the oats are dry add a tablespoon or two of milk and stir. Serve chilled or warm as desired.
Notes
If you prefer a parfait-style presentation, layer the peaches separately as you assemble the oats. Adjust sweetness to taste with maple syrup or honey.
