Crispy Buffalo-Style Air Fryer Baby Potatoes

These Buffalo Air Fryer Baby Potatoes are a crispy, spicy side that comes together with minimal prep and few ingredients. Ready in minutes, they make a perfect companion for burgers, chicken, or a casual weeknight meal.

Air fryers have become a kitchen staple for good reason: they turn ordinary ingredients into crisp, flavorful dishes with less oil and far less time than traditional methods.

Potatoes are one of the best foods to cook in an air fryer—fries, wedges, tater tots, and home fries all get wonderfully crisp without deep frying. These buffalo baby potatoes are small, crunchy bites coated in a buttery hot sauce that’s irresistible.

Roasting these potatoes in a conventional oven could take close to an hour, but the air fryer dramatically reduces the cooking time while still producing golden, crisp results.

What you will need to make this recipe:

  • Baby or new Yukon Gold potatoes are my go-to because they’re easy to quarter and cook evenly. Any small potato cut into bite-sized pieces will work.
  • Frank’s RedHot is my favorite for buffalo flavor, but you can substitute another hot sauce if you prefer.

How to make these:

These air fryer baby potatoes are quick and straightforward to prepare.

  • Rinse and cut the potatoes into bite-sized pieces; quarter mini potatoes.
  • Toss potatoes with olive oil, garlic powder, salt, and pepper so they’re evenly coated.
  • Lightly spray the air fryer basket with oil. Spread the potatoes evenly in the basket—some overlap is fine, or cook in batches for a single layer.

  • Air fry at 400°F. After about 9 minutes, shake or toss the potatoes, then continue cooking another 7 minutes or until golden and crisp. Cook longer if you want extra browning.
  • While the potatoes cook, melt butter and whisk in the hot sauce. Add an extra pinch of garlic powder if you like a stronger garlic flavor.
  • When the potatoes reach your desired crispiness, transfer them to a bowl, pour the buffalo sauce over them, and toss gently to coat. Let cool a few minutes, then serve with blue cheese crumbles or a drizzle of ranch.

Notes and Tips:

  • To make the sauce milder: reduce the hot sauce. The butter tames heat, so adjust to your taste.
  • Keep them extra crisp: serve the buffalo sauce on the side as a dip. Coating potatoes in sauce will soften them slightly.
  • Air fryer size: I use a 5-quart air fryer that fits these potatoes with minimal overlap. If your air fryer is smaller (around 2 quarts), cook in batches for best results.

Ingredients

  • 1 lb petite potatoes, diced
  • 1 ½ T olive oil
  • ½ tsp garlic powder, salt and pepper to taste
  • 3 T butter
  • c Frank’s RedHot

Instructions

  • Prep the potatoes: chop into bite-sized pieces and toss with olive oil, garlic powder, salt, and pepper. Lightly spray the air fryer basket with oil.
  • Place the potatoes in the air fryer basket in an even layer. Preheat to 400°F if required and cook for 9 minutes.
  • Shake or toss the potatoes, then cook another 7 minutes or until they are golden and crispy.
  • While the potatoes cook, melt the butter and whisk in the hot sauce. Transfer cooked potatoes to a bowl, toss with the buffalo sauce, let cool a few minutes, and serve.

Notes

  • For milder heat: reduce the amount of hot sauce. The butter helps balance the spice.
  • Keep them extra crisp: serve the buffalo sauce on the side as a dip so the potatoes don’t soften.
  • Air fryer capacity: in a smaller air fryer, cook in batches for best results.
