Peanut Butter Banana Oat Energy Bites for Quick Breakfast

These Peanut Butter Banana Oatmeal Balls, also called Chunky Monkey Oatmeal Bites, are an ideal way to use up ripe bananas. Ready in about 10 minutes, they make a nutritious, kid-friendly snack everyone will enjoy.

Banana, nuts and chocolate combine into a simple, satisfying bite. These Peanut Butter Banana Oatmeal Balls are my go-to when bananas start to brown — no baking required, just mash, mix and roll.

I experiment a lot with no-bake oatmeal bites trying to match some of my favorites. After testing variations using extra-ripe bananas, I landed on this Chunky Monkey version that balances peanut butter, banana and chocolate in a soft, oat-forward bite.

Feel free to swap ingredients to suit your pantry. Almond butter works well in place of peanut butter, and add-ins like shredded coconut, white chocolate chips, raisins or a pinch of cinnamon let you customize the flavor.

  • 1 very ripe banana
  • 1 3/4 cup rolled oats (regular or gluten-free)
  • 1/3 cup creamy peanut butter (or almond butter)
  • 1/3 cup ground flaxmeal
  • 1/4 cup plus 1–2 Tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 2 Tbsp mini chocolate chips
  • 1 tsp chia seeds (optional)
  • 1/2 tsp sea salt

These bites are flexible: swap nut butters, adjust sweetness with maple or honey, and add optional chia seeds or coconut if you like. The texture comes together quickly and only needs a short chill to firm up for rolling.

If you try adding shredded coconut or another mix-in, experiment with the amounts and let the mixture rest in the fridge for a few minutes so it holds together while forming balls.

Ingredients 

  • 1 very ripe banana
  • 1 3/4 cup rolled oats, regular or gluten free
  • 1/3 cup creamy peanut butter, or almond butter
  • 1 tsp chia seeds, optional
  • 1/3 cup ground flaxmeal
  • 1 tsp vanilla extract
  • 1/4 cup plus 1-2 T maple syrup or honey
  • 2 T mini chocolate chips
  • 1/2 tsp sea salt

Instructions 

  • In a large bowl, mash the ripe banana until smooth.
  • Stir in the peanut butter (or almond butter), maple syrup or honey, and vanilla until combined.
  • Add the oats, ground flaxmeal, chia seeds (if using), chocolate chips and sea salt. Mix until evenly combined.
  • Chill in the refrigerator for 10–15 minutes so the mixture firms up slightly.
  • Roll the mixture into bite-sized balls and enjoy. Store leftovers in the refrigerator.
