These banana bread bites are inspired by peanut butter and chunky monkey oat bites and capture that familiar banana-cinnamon flavor without turning on the oven. They’re quick to prepare, kid friendly, and use up very ripe bananas so nothing goes to waste.

- 2/3 cup rolled oats (regular or gluten free)
- 1 very ripe banana
- 5–7 Medjool dates, pitted
- 1 tsp vanilla extract
- 1/2 Tbsp cinnamon
- Dash of sea salt
Instructions
- In a food processor, combine walnuts, almonds and oats and process until coarsely ground.
- Add the dates, banana, vanilla, cinnamon and sea salt. Pulse until the mixture forms a sticky dough. Add another date or a splash of water if too dry; add 1–2 tablespoons oats if too wet.
- If the dough is sticky, freeze it 15–20 minutes to make rolling easier. Roll into bite-sized balls.
- Refrigerate 20–30 minutes to set. Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.
