These simple no-bake Chocolate Coconut Date Balls are a satisfying snack that combines rich chocolate with naturally sweet dates. Ready in about 5 minutes, they get even better with an optional chocolate drizzle—perfect for soothing a sweet tooth while keeping you fueled.

No-bake energy bites are one of my favorite easy snacks. The flavor combinations are endless, and dates provide just the right natural sweetness and binding texture.

These chocolate coconut date balls were inspired by my love of Lara Bars. I keep a batch of no-bake bites on hand for quick, wholesome snacking whenever I need a pick-me-up.

Ingredients and Substitutions:

  • Pecans: I use raw pecans here. If you prefer or have an allergy, swap with all almonds, walnuts, or cashews.
  • Almonds: Can be substituted with other raw nuts as noted above.
  • Medjool dates: Large, sweet dates provide natural sweetness and help bind the mixture. Use pitted dates; if your dates are smaller, add a few more to reach the right texture.
  • Coconut: Unsweetened shredded coconut keeps these bites less sweet, but sweetened coconut works too—just note it may add extra moisture.
  • Vanilla extract for added depth of flavor.
  • Cocoa powder: Unsweetened cocoa is recommended. Use dark cocoa or cacao powder if you prefer a richer, deeper chocolate flavor.
  • Sea salt: Just a pinch enhances the chocolate and balances the sweetness.
  • Optional add-ins: Chia seeds, protein powder, hemp seeds, or mini chocolate chips make great additions.

How to make these energy balls:

  1. Process the nuts in a food processor until they reach a fine, grain-like texture.
  2. Add the dates, shredded coconut, vanilla, cocoa powder and salt. Process until a dough begins to form and the mixture starts to clump together. If the mix seems dry, add a teaspoon or two of water and process again.
  3. Roll the dough into bite-sized balls and chill for 15–20 minutes to firm up.
  4. Optional: Melt a few tablespoons of dark chocolate or chocolate chips and drizzle over the chilled balls. Return to the fridge for 10–15 minutes to set the drizzle.

Recipe Tips

  • If your dates are dry, soak them in hot water for about 10 minutes before using to restore moisture—drain well before processing.
  • Use roughly 2 cups total of any combination of raw nuts (almonds, pecans, cashews, or walnuts) for best results.

Storage:

Store the date balls in an airtight container in the refrigerator for up to 2 weeks. For longer storage, freeze them in a freezer-safe container for up to 2 months.

They can be kept at room temperature if the environment is cool; however, they may soften slightly.

Ingredients

  • 1 cup raw pecans
  • 1 cup raw almonds
  • 12-14 Medjool dates, pitted
  • ½ cup shredded coconut, unsweetened
  • 1 tsp vanilla extract
  • 2 – 3 T cocoa powder
  • 3-4 cranks or sea salt

Optional

  • 1/4 cup dark chocolate chips

Instructions

  • Process the almonds and pecans in a food processor until they have a fine, grain-like texture.
  • Add dates, coconut, vanilla, cocoa powder and salt. Process until the mixture starts to form a dough. If it seems dry, add a teaspoon of water and process again.
