This Banana Bread Instant Pot Steel Cut Oatmeal blends the warm flavors of banana, brown sugar and cinnamon into a creamy, wholesome bowl of oats you can make quickly in the Instant Pot.

You Need Instant Pot Steel Cut Oatmeal!
This Banana Bread Steel Cut Oatmeal brings together three favorite things: banana bread flavor, hearty steel cut oats, and the convenience of the Instant Pot. The result is a cozy, flavorful breakfast that’s simple to make and perfect for using ripe bananas.
If you love banana-forward breakfasts, this is for you. Steel cut oats cooked under pressure become wonderfully creamy and tender without the long stovetop simmer. The Instant Pot does the heavy lifting—just measure, stir, and walk away until it’s ready.

Why use the Instant Pot?
The Instant Pot offers the best of both worlds: the texture of slow-cooked oats with the speed of pressure cooking. Once I tried steel cut oats in the pressure cooker, I was impressed by how creamy and satisfying they became with minimal effort. This banana bread version highlights ripe bananas, cinnamon and a touch of brown sugar for a breakfast that tastes like dessert but feels wholesome.

The method is straightforward: mash ripe bananas, add milk, oats and spices to the Instant Pot, pressure cook briefly, then finish with maple, brown sugar and chopped pecans. The whole process—from turning the Instant Pot on to serving—takes about 15 minutes of active time plus a short natural release.
If you’re ready for warm banana bread–scented oats in the morning, this recipe is a great place to start. It’s forgiving, easy to customize, and a cozy way to begin the day.
Notes about this Banana Bread Instant Pot Steel Cut Oatmeal:
- I timed the full process from starting the Instant Pot to serving at about 15 minutes. That includes 3 minutes of manual pressure cook time, a 5-minute natural release, then a quick release to open the pot.
- Sweetness is adjustable. I like a little maple and a bit of brown sugar, but you can skip added sweeteners if your bananas are very ripe or add more to taste after cooking.
- If you don’t have steel cut oats, you can use rolled oats instead—reduce the liquid by 1 cup (use 2 cups liquid rather than 3). The texture will be different but still tasty.
- This recipe can be made gluten free if you use certified gluten-free steel cut oats. Make it dairy free by choosing your preferred plant-based milk. Omit the pecans for nut-free needs.
- For extra richness, stir in a pat of butter just before serving.
- Always use very ripe bananas for the best flavor and easiest mashing.
