Bailey’s Dark Chocolate Avocado Mousse

Ingredients
- 3 very ripe avocados
- 1/4 c Irish Cream liqueur or Irish Cream coffee creamer
- 2 T pure maple syrup (or sweeten to taste)
- 1 tsp vanilla extract
- 1/4 c cocoa powder
- 1/4 c dark chocolate chips, melted
- Dash of sea salt
Instructions
- Combine all ingredients in a food processor.
- Process until very smooth, pausing to scrape down the sides as needed.
- Spoon into 2–3 individual serving dishes and chill for about 1 hour to let the flavors meld.
- Top with whipped cream if desired and serve.
