Chai Spiced Energy Bites

Ingredients

  • 1 cup raw almonds
  • 1 cup raw pecans
  • 10 Medjool dates, pitted
  • 1 cardamom seed (remove pod)
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp vanilla extract
  • dash of sea salt
  • dash of black pepper (optional)

Instructions

  • In a food processor, pulse the almonds, pecans, and the cardamom seed until they form a coarse meal. Aim for small grains rather than completely pulverized flour if you prefer a bit of texture.
  • Add the pitted dates, cinnamon, ginger, vanilla, nutmeg, cloves, sea salt, and a dash of black pepper if using. Process until the dates are fully incorporated and the mixture comes together like a sticky dough. If it seems too dry, add a teaspoon of water at a time until it holds.
  • Scoop and roll the mixture into bite-sized balls. Store the energy bites in an airtight container in the refrigerator for up to two weeks.

Notes

If you only have ground cardamom, start with a very small amount (about 1/8 tsp) and adjust to taste—cardamom can easily overpower the mix.
