  • Cook the pasta: Boil shells until just under al dente (about 1 minute less than package directions). Drain, rinse with cool water to stop cooking, toss lightly with olive oil, and lay them out on a parchment-lined sheet so they don’t stick.
  • Cook the beef: In a large skillet over medium-high heat, warm a drizzle of olive oil and sauté the onion until translucent. Add the ground beef, break it up, and cook until no pink remains, about 7–10 minutes. Drain excess grease and let cool slightly.
