  • Puff pastry: Sheet sizes vary by brand. I used Pepperidge Farm — one sheet yields nine tarts of roughly 3.5″ x 3.25″. If you use a larger sheet, you can cut it into twelve pieces and adjust the filling. You can also use homemade puff pastry if you prefer.
  • Apricot jam: Apricot is lovely here, but feel free to substitute blueberry, fig, cranberry or another favorite jam. Each will pair well with soft cheese.

Step 1: Preheat the oven to 400°F. Roll out thawed puff pastry and cut into 9 equal pieces (or 12 if using a longer sheet). Place pieces on a parchment-lined baking sheet and score a 1/2″ border around each square to help create a raised edge.

You can freeze baked tarts for up to 3 months: cool completely, place in a freezer-safe container, and thaw before reheating. For best texture, reheat from thawed.

To reheat: bake at 350°F for about 10 minutes covered loosely with foil, or warm for a few minutes in an air fryer at 350°F. Microwaving is possible but will soften the pastry and reduce crispness.

  • ¼ cup chopped walnuts
  • 1 Tbsp thyme leaves

Instructions

  • Preheat oven to 400°F.
