American cheese is classic, but Havarti grilled cheese is a close second
If you love the classic American grilled cheese, you’re not alone. It’s quick, nostalgic, and reliably delicious. But trying new cheeses can turn an ordinary sandwich into something memorable. Inspired by that search for new flavors, I experimented beyond my usual cheddar and American routine and landed on one of my favorite sandwiches: Havarti, avocado and baby arugula grilled cheese.
In our house, grilled cheese and soup are a regular pairing. The classic never disappoints, but this version brings a creamier, more sophisticated profile while staying comforting and simple to make.

I like my sandwich toasted until it’s deeply golden — close to the edge of char — rather than only lightly warmed. A properly browned exterior makes all the difference in texture.
Branching out: Why Havarti?
I tend to keep a predictable cheese rotation at home — cheddar, American and mozzarella — with the occasional feta or generous sprinkle of Parmesan on many dishes. But when I researched cheeses that melt well for grilled cheese sandwiches, Havarti kept coming up for its buttery, gooey melt.
Havarti melts beautifully and becomes incredibly creamy. It really does melt almost too well: using too many slices can make the sandwich overly messy as the cheese oozes out. Two slices per sandwich is the sweet spot.

I treat the avocado like I would for avocado toast: mash it and fold in lemon juice, garlic powder, sea salt, cracked pepper and a pinch of crushed red pepper. That bright, tangy, slightly spicy avocado contrasts perfectly with the richness of Havarti, and the baby arugula adds a peppery finish that wilts slightly when pressed between the hot bread and cheese.
This combination felt like a high bar for future grilled cheese experiments, but it’s a delicious place to start. I enjoyed the process of testing and refining until the balance felt just right.

- Bread: Choose a sturdy, slightly thick-sliced bread so it holds up to the gooey cheese and mashed avocado without becoming soggy. The slices used here could have been a little thicker for extra structure.
- Havarti cheese: A creamy, melt-friendly cheese. Two slices per sandwich is ideal to avoid excessive overflow.
- Avocado: Mash and season it as you would for avocado toast — this is where the bright flavor comes from.
- Arugula: Adds a peppery freshness. If you don’t have arugula, baby spinach is a fine substitute or omit if needed.
- Lemon juice: A little brightens the avocado.
- Garlic powder: A simple way to boost savory flavor in the avocado.
- Crushed red pepper: Adds a gentle heat; use to taste.
- Sea salt and cracked pepper: To taste.
- Butter or ghee: For toasting the bread until crisp and golden.

Havarti, Avocado, Baby Arugula Grilled Cheese

Ingredients
- 4 pieces bread of choice
- 4 slices Havarti cheese (about 2 slices per sandwich)
- 1 ripe avocado
- Handful baby arugula (or spinach)
- 1/2 tsp lemon juice
- 1/4 tsp garlic powder
- 1/8 tsp crushed red pepper (or to taste)
- Sea salt and cracked pepper to taste
- Butter or ghee for grilling
Instructions
- In a small bowl, mash the avocado until smooth. Stir in lemon juice, garlic powder, crushed red pepper, sea salt and cracked pepper. Taste and adjust seasoning.
- Spread butter or ghee on one side of each slice of bread.
- Heat a skillet over medium heat. Place two slices of bread in the skillet, buttered side down.
- Layer two slices of Havarti on each piece of bread in the skillet. Spread half of the seasoned avocado on each, then top with a handful of baby arugula. Place the remaining bread, buttered side up, on top.
- Cook until the bottom bread is golden brown, about 3–4 minutes. Flip and cook the other side until golden.
- Lower the heat, flip again so the cheese side faces the heat, and allow the sandwich to finish warming so the Havarti melts fully.
- Remove from the skillet, slice, and serve with your favorite side.
