For the Cake

  • 1 box spice cake mix (13.25–15.25 oz) — yellow cake mix can be used
  • 3 large eggs
  • ½ cup vegetable oil (canola works)
  • 1 cup whole milk
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1–1½ tsp cinnamon
  • ½ tsp nutmeg
  • 2 cups shredded carrots (freshly grated)
  • ½ cup chopped pecans (optional)
  • ½ cup crushed pineapple, drained (optional)
  • Optional: 1 tsp orange zest

For the cream cheese frosting

  • 1 container cream cheese frosting (16 oz)
  • 6 oz softened cream cheese
  • 2 Tbsp light brown sugar
