Peanut Butter Banana Oatmeal Balls

Ingredients
- 1 very ripe banana
- 1 3/4 cup rolled oats, regular or gluten free
- 1/3 cup creamy peanut butter, or almond butter
- 1 tsp chia seeds, optional
- 1/3 cup ground flaxmeal
- 1 tsp vanilla extract
- 1/4 cup plus 1-2 T maple syrup or honey
- 2 T mini chocolate chips
- 1/2 tsp sea salt
Instructions

In a large bowl, mash the ripe banana until smooth.

Stir in the peanut butter (or almond butter), maple syrup or honey, and vanilla until combined.

Add the oats, ground flaxmeal, chia seeds (if using), chocolate chips and sea salt. Mix until evenly combined.

Chill in the refrigerator for 10–15 minutes so the mixture firms up slightly.
