I rely on quick, no-fuss treats during the holidays. These cracker sandwiches are my go-to when I need something fast to bring to a gathering. (Technically the Reese cups get warmed in the oven for a minute or two, but they still feel like a no-bake shortcut.)

I already love the White Chocolate Dipped Nutella Ritz Cracker Cookies, and after seeing someone melt a Reese cup between two crackers, I adapted the idea into these peanut butter–chocolate cracker cookies. They’re a hit every time.

Ingredient Notes

See the recipe card below for exact measurements.

Reese cup thins, chocolate melting wafers, sprinkles and other ingredients.
  • Reese Cup Thins: Use any variety you like—classic, dark, or white chocolate will all work and give slightly different flavors.
  • Melting chocolate: Choose a high-quality melting chocolate or chocolate wafers for best coating and finish. If using white chocolate, melt gently over low heat to avoid seizing.
  • Crackers: Standard Ritz crackers are ideal, but a similar gluten-free round cracker will work if needed.

Ways To Vary This Recipe

  • Use different flavors of Reese Cup Thins (white chocolate, dark chocolate, peanut butter)
  • Swap the coating: dark chocolate, milk chocolate, or white chocolate
  • Add a small spoonful of marshmallow cream to the top cracker before sealing for a fluffier center
  • Top with chopped peanuts, flaky sea salt, toasted coconut, chopped pecans, or festive sprinkles

Step-By-Step Instructions

Step 1: Preheat the oven to 300°F. Line a baking sheet with parchment paper and arrange 12 Ritz crackers, bottom side up. Place one Reese Cup Thin on each cracker.

Step 2: Bake 1–2 minutes, just until the tops of the Reese cups begin to soften and look glossy. You don’t want them to fully melt and run.

Step 3: Remove the pan and place another Ritz cracker on top of each softened Reese cup, pressing gently to seal. Transfer the pan to the refrigerator and chill 15–30 minutes so the candy firms up again.

Step 4: Once the sandwiches have re-set, melt the coating chocolate in the microwave in 20-second bursts at 50% power, stirring between intervals. When most of the chocolate is melted, stop heating and stir until smooth to prevent overheating. Dip each sandwich into the melted chocolate, let excess drip off (two forks help), then place on parchment. Top with sprinkles or your chosen garnish. Allow the chocolate to harden—refrigerate to speed this up if desired.

Recipe Tips

Chill the sandwiches before dipping: Make sure the Reese cups have fully re-set before coating. If they’re still soft, dipping becomes messy and the coating can smear or swirl, especially with white chocolate.

Melt chocolate slowly and gently: Use low heat and short microwave bursts or a double boiler for white chocolate. Overheated chocolate seizes and becomes unusable.

Storage

Store these cookies in a cool place for up to one week. To freeze, place fully cooled cookies in an airtight container with layers of parchment between them to prevent sticking.

Prep Time: 20
Chill: 30
Total Time: 50
Servings: 12 cookies

Ingredients

  • 24 Ritz crackers
  • 12 Reese Cup Thins (classic Reese cups are too big)
  • 12 oz. high-quality melting chocolate (about 2 cups)
  • holiday sprinkles

Instructions

  • Preheat oven to 300°F. Line a baking sheet with parchment and place 12 Ritz crackers bottom side up.
  • Place a Reese Cup Thin on each cracker and bake 1–2 minutes until the tops just begin to soften and look glossy.
  • Top each softened candy with a second Ritz cracker and press gently to seal. Chill 15–30 minutes until firm.
  • Melt coating chocolate in 20-second bursts at 50% power, stirring between intervals. When mostly melted, stop heating and stir to finish melting. Dip each sandwich, tap off excess, and place on parchment. Add sprinkles while the chocolate is wet.
  • Allow the coating to harden. Refrigerate to speed up setting if desired.

Notes

Storage: Store in a cool place up to 1 week, or freeze in an airtight container with parchment layers between cookies.

Tip: Make sure the Reese cups have fully re-set before dipping to avoid a messy coating. Chill for best results.

Melting chocolate: Work slowly and use low heat. Overheated chocolate will seize and become unusable. For white chocolate, consider a double boiler for more reliable melting.
