Strawberry S’mores Overnight Oats Recipe

Two words: Overnight oats.

They rank at the top of my breakfast list—right up there with pancakes and coffee. I always get asked for more overnight oat ideas, and I have a few in the queue. I space them out so they don’t all appear at once, but readers keep requesting them, so here’s another crowd-pleaser.

Recently I shared a snack recipe for Strawberry S’mores Pretzel Bites that quickly became a weekly favorite at our house. With s’mores ice cream showing up locally and all the s’mores talk, I wanted to capture that campfire flavor in a breakfast that won’t send me into a mid-morning sugar crash.

Yes, marshmallows at breakfast are allowed in my book. I don’t want an overly sweet morning, though, so this version balances fruit, cocoa, and just a hint of sweetness. The result is a fun, nostalgic breakfast that feels like dessert without being excessive.

This recipe would work great as a campfire breakfast—top with a toasted marshmallow if you like. The combination of chocolate, strawberries, marshmallows, and crushed graham crackers captures that s’mores vibe in a make-ahead jar.

I’m a fan of overnight oats that lean dessert-like. I’ve made Coconut Cream Pie Overnight Oats, Carrot Cake Overnight Oats, Apple Pie Overnight Oats, and Peanut Butter Cup Overnight Oats, so dessert-inspired flavors are a recurring theme here. This strawberry s’mores version joins that group.

There are a few ways to customize this. I prefer soggy graham crackers—growing up I dipped them in milk and loved them softened. For that reason I crushed the crackers and placed them at the bottom of the jar so they soften overnight. If you prefer crunch, reserve the crushed crackers and sprinkle them on top in the morning. I also briefly toasted a few marshmallows with a small flame to give them that charred-campfire character; it’s optional and requires caution, especially around children.

The rest is straightforward: mix the ingredients, chill, and finish with any desired toppings. In the morning you can eat it cold or warm it gently. It’s an easy, nostalgic way to start the day.

Strawberry S’mores Overnight Oats

Ingredients

  • 1/2 c rolled oats, regular or gluten free
  • 1/2 c milk of choice, chocolate almond milk is great (add more when serving if too thick)
  • 2 tsp chia seeds
  • 2 tsp maple syrup, or honey/sweetener of choice
  • 1 tsp cocoa powder, heaping
  • 1/2 graham cracker sheet(about 2 of the 4 pieces)
  • 3-4 strawberries, diced
  • 7-10 mini marshmallows
  • 1/2 tsp vanilla extract
  • dash of sea salt
  • dark chocolate chips, optional for garnish

Instructions

  • Crush the graham cracker and place it in the bottom of the jar or bowl you’ll use. (If you prefer the cracker crunchy, reserve it to sprinkle on top in the morning.)
  • Combine the oats, milk, chia seeds, maple syrup, cocoa powder, diced strawberries, mini marshmallows, vanilla, and a dash of sea salt in a small bowl and stir well.
  • Pour the oat mixture over the crushed graham cracker, seal, and chill overnight (or at least 4 hours).
  • In the morning, eat cold or warm gently. Garnish with extra chocolate chips or crushed graham crackers if desired.
