I adore a classic grilled cheese, but when I want something different I reach for this Blueberry Basil Goat Cheese version. If I’m not making the classic, I often make a Havarti Avocado grilled cheese — but when berries and basil are at their peak, this sandwich is my go-to.

How to make the best Blueberry Basil Grilled Goat Cheese Sandwich
The quick blueberry sauce is the secret here. You could use jam, but making the fresh blueberry topping takes only a few minutes and tastes fresher.
In a small saucepan, combine blueberries and maple syrup and bring to a gentle boil. As the berries soften, mash them while stirring. Let the mixture simmer about 5 minutes, then strain off the liquid and set the berries aside. (Reserve the strained liquid for pancakes or yogurt if you like.)

While the blueberry mixture cools slightly, prepare the bread. Spread butter on one side of each slice. Spread goat cheese on the unbuttered side of each slice. Place both slices butter-side down on a preheated skillet or griddle over medium heat.
Spoon the blueberry topping over the goat cheese on one slice, then add fresh basil leaves on top. Cook the bread until golden brown, then press the slices together to form the sandwich.
