This. Week.

That pretty much says it all. It’s been one of those weeks where one thing after another keeps piling up.

When weeks like this happen, self-care often gets pushed aside. I found myself reaching for extra coffee instead of going to bed earlier or carving out a few minutes of downtime. Not the best plan.

After work today I took a long nap, a hot shower, and started shedding the stress of the week. Tomorrow I have the day off and I plan to keep relaxing—a warm cup of coffee, a cozy spot on the couch, a good book and my pup nearby.

Sometimes I forget to slow down. This weekend I’m making a point to take care of myself. How will you unwind?

And when I’m curled up on the couch, I’ll likely have a little sweet treat nearby. Maybe not for breakfast, but at some point these 3-ingredient dark chocolate crunch bar cups will make an appearance.

Chocolate Crunch Bar Cups – my favorite homemade candy

I loved Nestle Crunch and Krackel bars growing up. Of all the mini Hershey bag options, I usually reached for the Krackel. Lately I’ve been making my own version with dark chocolate—my go-to these days—but milk chocolate works just as well if you prefer it.

The recipe uses three simple ingredients: dark chocolate (bar, squares, or chips), crispy rice cereal, and a touch of sea salt. That’s it. These cups are simple, satisfying, and perfect for an after-dinner treat. A small dollop of peanut butter on top is a delicious optional addition.

To form them, line a mini muffin tin with mini liners, fill each liner with the chocolate and cereal mixture, chill until set, then peel away the liner. Any small candy mold will work if you prefer a different shape.

I hope you find a little rest and relaxation this weekend—whether that includes chocolate or not.

Chocolate Crunch Bar Cups

If you love Nestle Crunch Bars, these simple 3-ingredient Chocolate Crunch Bar Cups are a delicious homemade treat: dark chocolate, rice krispies, and a hint of sea salt.

Servings: 20 cups

Ingredients

  • 6 oz. dark chocolate (bar, squares, or chips) (chopped if using bars or squares)
  • 1/3 c crispy rice cereal
  • Sea salt
  • 20 mini muffin liners

Instructions

  • Melt the chocolate. You can microwave in 30-second increments, stirring between each, or use a double boiler: simmer about 1 inch of water in a small saucepan, set a bowl above the water, add the chocolate and stir until melted.
  • Line 20 mini muffin cups with liners.
  • Stir the crispy rice cereal into the melted chocolate until evenly coated.
  • Spoon the mixture evenly into the lined muffin cups and chill for about 5 minutes.
  • Remove from the freezer, sprinkle a pinch of sea salt over each cup, then return to the freezer until fully set.
  • Store finished cups in the fridge or at room temperature.

Notes

Add a drop of peppermint oil for a mint chocolate variation.
