For a long time low-fat and fat-free products dominated the shelves, and many of us avoided richer ingredients. Thankfully the view of fat in recipes has shifted, and that makes treats like this both possible and delicious.
Whisked together and chilled briefly, coconut oil and cashew butter transform into soft, decadent fudge — no baking required.

This Maple Cashew Freezer Fudge is about as easy as dessert gets. Because coconut oil solidifies below room temperature, mixing it with cashew butter, maple syrup and a little vanilla creates a smooth, rich texture once chilled. The method is straightforward: stir the ingredients until smooth, pour into a mold or pan to at least one inch thickness, freeze until firm, and portion. Maple Cashew Freezer Fudge

Ingredients
- 1 cup cashew butter
- 1/4 cup coconut oil, melted
- 2-3 T maple syrup
- 1 tsp vanilla extract
- Dash of sea salt
Instructions

Whisk all ingredients together in a mixing bowl until smooth.

Spoon the mixture into a small silicone candy mold or a small pan or dish, aiming for at least one inch thickness.

Freeze for about two to three hours, until fully set.

Remove from the silicone mold or cut into bite-sized pieces.

Store in the refrigerator for short-term use or in the freezer for longer storage.
