Ingredients

For Steak Bites:

  • 1½ lb steak, cut into bite-sized pieces (approx. 1½ in. cubes)
  • 2–3 Tbsp olive oil
  • 2–3 tsp lemon juice
  • 2 garlic cloves, minced
  • ½ Tbsp fresh thyme, finely chopped (¾ tsp dried)
  • 1 tsp fresh rosemary, chopped (½ tsp dried)
  • 1 tsp dried oregano
  • ½ tsp sea salt
  • ½ tsp freshly cracked pepper
  • ⅓ cup feta cheese
  • 1 cup grape tomatoes, halved

For the Yogurt Sauce:

  • ½ cup plain Greek yogurt
  • 1–2 garlic cloves, minced
  • 1 tsp lemon juice
  • 2 tsp olive oil
  • 1 Tbsp chopped dill (or 1–2 tsp dried)
  • Salt, to taste

Instructions

For the Steak Bites:

  • In a bowl or large zip-top bag, whisk olive oil, garlic, oregano, thyme, rosemary, lemon juice, salt, and pepper. Add the steak bites and toss to coat. Marinate at least 30 minutes if possible (ideally 2–4 hours). Avoid marinating much longer than 4 hours because of the lemon juice.
  • Heat a cast-iron or nonstick skillet over medium-high heat. Add the steak and any remaining oil to the pan. Cook about 2–3 minutes per side, flipping once and handling minimally so pieces brown evenly.
  • If you prefer more done steak, cook an additional 2–4 minutes. Remove from heat, toss in halved tomatoes to warm slightly, and sprinkle with feta before serving.

For the Yogurt Sauce:

  • Combine Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, and salt to taste in a small bowl. Chill until ready to serve.
  • Spoon the sauce over the steak bites or serve it on the side as a dip.

Notes
