This weekend is shaping up to be busy, and I have to admit a Piña Colada on the patio would hit the spot. Since time is limited, I made a portable version: No Bake Piña Colada Bites. I brought them to work for taste testing and several coworkers said these are their favorite of all the energy bites I make — I’ll call that a win.
These bites are bright, refreshing, and perfect for a quick pick-me-up between meals. I always keep a stash of energy bites on hand for those mid-afternoon slumps, and these deliver both flavor and satisfaction. The hardest part is resisting the urge to snack on the dried pineapple before it makes it into the processor — dried pineapple is my favorite.

Ingredients
- 1 1/2 cup raw almonds
- 1/2 cup raw macadamia nuts, unsalted
- 7-8 medjool dates, pitted
- 1/2 cup dried pineapple, unsweetened if possible
- 1/2 cup shredded coconut
- 1/2 tsp vanilla extract
- 1/2 T coconut oil, not melted
- Dash of sea salt
Instructions

In a food processor, pulse the almonds and macadamia nuts until they reach a fine, grainy texture.

Add the dates, dried pineapple, shredded coconut, vanilla, coconut oil, and a dash of sea salt. Process until everything is well combined. If the mixture seems dry, add a tablespoon of water at a time until it holds together.

Form the mixture into bite-sized balls, or press into a pan and cut into bars.

Chill for about 20 minutes before serving.

Store in the refrigerator for up to one week.
